For Nicolle Hahn, the standard of the food reflects the standards of the person who made it.

"I know how you are by how you do it. If people slap things on and the eggs are a little wonky and the bacon's not cooked well, then I know that's a reflection of you. That's a reflection of your standards. And I don't accept those standards."

That's something she makes clear to anyone who wants to work in her kitchen.

"If you want to work in my kitchen, you'll find it really, really hard if you don't have standards, and you don't have personal standards for yourself. What I tell these guys is I don't want to see your authentic self here. I want to see your caring self. I want to see your happy self. I want to see your committed self, your focused self."

It's a philosophy built on self-belief, and she carries that self-belief through her mentoring.

"With mentoring people, I think when people get it wrong, it's that they don't believe in themselves, because that's what it's all about. It's like, do I believe enough in myself to share my skills with somebody else?"
