Our Jasmine Pearls are made with spring-flush green tea from Yunnan Province, China, grown in a biodynamic tea garden in the mountains surrounding Pu’er. Cultivated at elevations of 1200–2000 metres, the high-altitude, humid climate supports slow, even leaf development, resulting in a tea with clarity and finesse. The tea is hand-picked as one bud and two leaves, then carefully rolled into pearls to protect the leaf and preserve aromatics. Once shaped, the tea is set aside until jasmine flowering season. Freshly picked jasmine blossoms are layered over the tea for 5 days and nights. As the flowers open, their fragrance is absorbed by the pearls, naturally scenting the tea without the use of oils or additives. Carefully roasted to highlight balance and clarity, making it ideal for both black espresso & milk-based coffees. Balboa Regional Plus represents Cofinet’s category of high-quality coffees sourced from well-managed farms or exceptionally quality-driven cooperatives or associations. Compared with their standard “Regional” offering, Regional Plus coffees typically meet a higher quality threshold, with a scoring guideline of 86+. Balboa Regional Plus typically showcases a clean & structured cup profile shaped by its high-altitude origins in Cauca & the careful processing standards of the producer group. Expect caramel sweetness, raisin depth, orange brightness & a soft pear-like acidity — hallmark notes of this region when fermentation is well-managed. Cherries are picked at peak ripeness, pulped, & undergo a dry anaerobic fermentation of around 20 hours, which enhances fruit clarity without introducing overt ferment characteristics. The coffee is then dried slowly in parabolic dryers to a target moisture of 11%, preserving longevity & ensuring a stable, consistent profile across the season.
