Grown at Canastra Farm in Brazil’s Cerrado Mineiro region, it reflects Edson Luiz Ignacio’s long-term commitment to producing high-quality coffee at scale while maintaining environmental balance. From the beginning, the farm has been developed with sustainability in mind, reserving large areas for native vegetation and protecting natural waterways to ensure the landscape remains as productive as it is resilient. Sitting between 1,000 and 1,250 metres above sea level, the farm benefits from warm days, cool nights, and a clearly defined harvest season that allows cherries to mature slowly and evenly. A mix of varieties—including Arara, Catucaí, Bourbon, and Acauã—are cultivated with careful soil management and organic inputs. Processed as a pulped natural, São Pedro da Canastra delivers a composed, generous cup: soft chocolate and nut notes layered with ripe stone fruit sweetness and a rounded, syrupy texture, finishing clean and balanced.
