Rwanda, Gasherebuka - Coffee roasted for filter
Stone fruit & honey sweetness with mandarin acidity. Region: Nyamasheke Process: Washed Varietals: Red bourbon Nyabumera is a washing station with a story of revival. Dormant for many years, it was purchased just two seasons ago by Providence, a young and ambitious coffee operator already well-regarded in the region. What he acquired was little more than a rundown wet mill—no functioning drying beds, worn-out tanks, and a layout begging for reinvention. Through careful renovation, Providence rebuilt Nyabumera into a clean, modern facility and has quietly guided it through the last two harvests with focus and intent. The station receives cherry from smallholder farmers in Nyamasheke, a district known for its high altitudes, rich soils, and gentle, steady rainfall rolling in from the Nyungwe Forest. These natural conditions—cool nights, warm days, and reliable moisture—create an ideal environment for slow ripening and dense, high-quality coffee. Providence’s long-standing relationship with the farmers and the Rwanda Trading Company helped ensure a smooth transition, with many growers already familiar with his work at his other wet mill. The results have been exceptional. In just two seasons, Nyabumera has established itself as a quietly reliable source of clean, sweet Rwandan coffees with mild acidity and a pleasing, lingering aftertaste. The cup is a reflection of both the region’s natural gifts and Providence’s commitment to producing coffees of clarity and precision. For a once-silent station now humming with potential, Nyabumera’s resurgence is both a personal triumph and a welcome addition to Rwanda’s specialty landscape. Roasted for filter by Assembly in our North Melbourne roastery, Wurundjeri Woi Wurrung Country.

Green tea - Jasmine Pearls 250 grams SERVICE
Our Jasmine Pearls are made with spring-flush green tea from Yunnan Province, China, grown in a biodynamic tea garden in the mountains surrounding Pu’er. Cultivated at elevations of 1200–2000 metres, the high-altitude, humid climate supports slow, even leaf development, resulting in a tea with clarity and finesse. The tea is hand-picked as one bud and two leaves, then carefully rolled into pearls to protect the leaf and preserve aromatics. Once shaped, the tea is set aside until jasmine flowering season. Freshly picked jasmine blossoms are layered over the tea for 5 days and nights. As the flowers open, their fragrance is absorbed by the pearls, naturally scenting the tea without the use of oils or additives. The result is a softly floral, balanced cup with depth, freshness and a lingering jasmine aroma.
