The cherries undergo a five-day anaerobic fermentation, carefully monitored for Brix and pH, before being dried on raised beds under shade for 30–45 days. By controlling fermentation, drying, and storage, the micromill ensures a clean, consistent cup with vibrant fruit-forward character.
