THE NATURAL BEAN JOURNEY This coffee begins its journey the day it is harvested in the Pitalito region of Huila, Colombia. Ripe cherries from Caturra, Bourbon Amarillo, and Colombia varieties are delivered to the processing station, where they are carefully washed and disinfected to remove immature fruit and impurities, ensuring only the highest-quality cherries progress. The cherries then undergo a controlled 24-hour oxidation period, enhancing aromatic complexity before pulping and thorough rinsing. Finally, the coffee is mechanically dried in a controlled, homogeneous environment to stabilise the beans and preserve their layered flavours. This meticulous process results in a clean yet expressive natural coffee with outstanding complexity and consistency.
