[Dark Roast] This is a salute to the true Italian style coffee with its rich deep roast profile. The roasting approach of our House Dark Blend is different to that of the Seasonal. If we used the same approach, by raising the heat in the first half of the roasting process and lower it in the second half, it wouldn't be enough or sufficient to be an optimal roasting process. This being said, roasting high towards the end of the life cycle of the bean would simply burn the coffee. In this instance, this blend has been ideally crafted throughout the heating phase by controlling its endothermic range. There have been various tweaks of duration time and temperature that have resulted in this perfect medium-bodied dark roast. Origin: Mexico Region: Chicomuselo & Comalapa, Chiapas Mexico Producer: Various smallholders Elevation: 1100 - 1600 MASL Process: Mountain water (washed) process, Decaffeination Varieties: Catuai & Typica Tasting notes: Dark Toffee, Cinnamon, Apple Crumble & Stewed Fruit In the state of Chiapas, you will find Mexico's oldest and largest coffee producing regions, some farms can look back on a history of more than a hundred years. With the influence of the Atlantic Ocean on one side, and the Pacific Ocean on the other, the mountain slopes of Sierra Madre Chiapas cross the region dividing the state, and creating various special microclimates. This coffee is decaffeinated using the Mountain Water Process which involves sourcing natural mountain water from the Pico Orizaba (one of the largest mountains in Mexico). Before going into process, a detailed physical chemical analysis is performed to determine optimal conditions. Beans are steamed and prepared before the extraction. Using a water-based saturation solution of solid soluble from the coffee beans, the caffeine is extracted under controlled conditions of flow, temperature, pressure, and vacuum. After the extraction takes place, the coffee is dried gently through the triple drying system and ends with the coffee beans being polished. This natural process leaves a full flavoured coffee without any chemical residue.
