DECAF - COL Popayan Reserve Caturra & Castillo Washed Decaf
Tasting notes: Caramelised fig, raw sugar, & brown spice Region: Popayan Such a great decaf, this will take you on a great coffee journey and deliver a clean and vibrant cup that will leave you wanting more. No fear of missing out here, this decaf sure is one quality coffee! The Popayan Reserve is a regional lot from the department of Cauca, Colombia. This region was chosen as it is conducive to producing coffees with good body and sweetness. Currently 67 select farms contribute to this regional lot and it provides employment for over 400 people. This coffee is decaffeinated using ethyl acetate (derivative from sugar-cane). It selectively removes the caffeine from the coffee while leaving all the other tasty flavour compounds. Ethyl acetate occurs in ripening fruit and is a highly volatile compound meaning that none of it remains after the coffee has been roasted.

Its flavour profile is exciting and easy to brew - a coffee for the adventurous! Ghost Rider is comprised of natural processed coffees from Brazil and Ethiopia. Brazil brings the base notes of milk chocolate and a syrupy mouthfeel – Ethiopia brings the high fruity notes of red grape and blueberry. This fine recipe won the Golden Bean Award in Australia in 2013 and then went on to win three more gold medals back-to-back! Tasting notes: Plum, carob, wild berries, & winey Region: Alajuela, West Valley Elevation: 1400 - 1700 masl About: At Volcán Azul, the story begins long before the first cherry hits the drying beds. Two farmers, Alejo C. Jiménez in Costa Rica and Wilhelm Kahle in southern Mexico, set out in the early 1800s with a simple aim: grow exceptional coffee for a growing European market. Their families continue that work today on rich volcanic soil more than 1400 metres above sea level, tending trees that thrive in three distinct Costa Rican regions. Quality here is not a slogan. It is years of patient labour, careful farming, and a commitment that doesn’t waver. Alejo Khale Castro now leads the farm, continuing a legacy recognised with consistent Cup of Excellence placements. Healthy soil, resilient varieties, and strict picking standards build the foundation. Cherries are selected at peak ripeness, often measured at 22 brix or higher, before moving through meticulous sorting to remove floaters and field debris. Each step protects the flavour potential locked inside the seed. Drying is deliberately slow, allowing sugars and nuance to develop without rushing the process. Conservation also sits at the heart of the farm’s philosophy, with rainforest protected to sustain the land that sustains the coffee. This steady, thoughtful approach shapes every cup.
