Tasting Notes: Caramel, baking spice, & orange citrus Region: Fresno, Tolima Producer: Elías and Shady Bayter Relationship: Since 2026 Altitude: 1850 masl El Vergel Estate sits in Fresno, Tolima, where Elías and Shady Bayter have spent more than a decade refining their approach to coffee. What began as a family farm has grown into Forest Coffee, a network connecting more than 250 coffee-growing families through a focus on quality, innovation and transparent trade. This lot is naturally decaffeinated using the sugarcane process in Colombia. Green coffee is gently steamed before caffeine is removed with naturally derived ethyl acetate from sugarcane. The beans are then steamed again to remove any remaining residue, preserving the coffee's sweetness, structure and origin character while reducing caffeine by 99%. The result is a decaf that drinks like coffee first, decaf second. Sweet, balanced and full of flavour, without compromising the character that makes Colombian coffee so enjoyable.

Tasting Notes: Milk chocolate, red grape, blueberry, & syrupy The Ghost Rider blend by Proud Mary is designed to cut through milk and create a sweet and fruity latte or espresso. Its flavour profile is exciting and easy to brew - a coffee for the adventurous! Ghost Rider is comprised of natural processed coffees from Brazil and Ethiopia. Brazil brings the base notes of milk chocolate and a syrupy mouthfeel – Ethiopia brings the high fruity notes of red grape and blueberry. This fine recipe won the Golden Bean Award in Australia in 2013 and then went on to win three more gold medals back-to-back! Its flavour profile is interesting and easy to brew - a real crowd pleaser! Angel Wings is comprised of washed processed coffees from El Salvador and Colombia. El Salvador brings base notes of caramel and a buttery mouthfeel – Colombia brings the high fruity notes of orange citrus and stone fruit.
