DECAF - COL Popayan Reserve Caturra & Castillo Washed Decaf
Tasting notes: Caramelised fig, raw sugar, & brown spice Region: Popayan Such a great decaf, this will take you on a great coffee journey and deliver a clean and vibrant cup that will leave you wanting more. No fear of missing out here, this decaf sure is one quality coffee! The Popayan Reserve is a regional lot from the department of Cauca, Colombia. This region was chosen as it is conducive to producing coffees with good body and sweetness. Currently 67 select farms contribute to this regional lot and it provides employment for over 400 people. This coffee is decaffeinated using ethyl acetate (derivative from sugar-cane). It selectively removes the caffeine from the coffee while leaving all the other tasty flavour compounds. Ethyl acetate occurs in ripening fruit and is a highly volatile compound meaning that none of it remains after the coffee has been roasted.

Wild - PER El Morito Bourbon Natural
Tasting notes: Chocolate, black plum, & creamy Region: Diamante, San Jose de Lourdes, San Ignacio, Cajamarca Elevation: 1750 masl About: At Finca El Morito, quality is built slowly, across generations, and refined through intent. The Flores family have been producing coffee since the 1970s, with deep roots in northern Cajamarca. In 2009, patriarch Faustino Flores established Finca El Morito after relocating to San Ignacio, laying the foundation for what has become one of the region’s most respected family estates. Today, 70% of production comes directly from Flores family farms, with the remaining coffees sourced from closely connected neighbouring producers across Cutervo and San Ignacio. Anthony Vasquez represents the next chapter. A fourth-generation producer and trained civil construction technician, Anthony has emerged as the leading young processor on the farm. His focus is on precision and repeatability, working with varieties including Bourbon, Marshell, Geisha, and Sidra alongside his family Under the supervision of David Flores, the estate continues to refine its approach, earning multiple Cup of Excellence placements, most recently in 2022. The goal is simple and deliberate: make coffee farming viable, skilled, and compelling for future generations.

Wild - HON Nahun Fernandez Parainema Natural
Tasting notes: Blackberry, red apple, & plum Region: Las Flores, Santa Barbara Elevation: 1500 - 1550 About: Proud Mary’s connection to the Santa Barbara region of Honduras began all the way back in 2012, when we were introduced to a small group of producers situated around the town of Peña Blanca, close to the shores of the stunning Lake Yojoa. More than a decade later, that group of producers has grown in number, and our relationships have deepened. Nahun was one of the first producers we ever started working with. Back then, he grew traditional varieties and only processed coffees using the washed method. Today, he is a processing master and has become a leader in his community by sharing all the techniques he has learnt. Because of Nahun’s dedication to both quality and his community, the quality of coffee produced in the Las Flores community has been steadily improving. When we first started working with Nahun, naturally processed coffees were not a part of life in Las Flores. In 2016, the Fernandez family and Proud Mary ran a small experiment to see what might happen. The result was delicious. What began as a single bag of naturally processed coffee has, over time, revolutionised coffee production in and around Las Flores. Nahun’s Natural Parainema is quickly becoming a mainstay on our menu.
