DECAF - COL Popayan Reserve Caturra & Castillo Washed Decaf

No fear of missing out here, this decaf sure is one quality coffee! The Popayan Reserve is a regional lot from the department of Cauca, Colombia. This region was chosen as it is conducive to producing coffees with good body and sweetness. Currently 67 select farms contribute to this regional lot and it provides employment for over 400 people. This coffee is decaffeinated using ethyl acetate (derivative from sugar-cane). It selectively removes the caffeine from the coffee while leaving all the other tasty flavour compounds. Ethyl acetate occurs in ripening fruit and is a highly volatile compound meaning that none of it remains after the coffee has been roasted.

Tasting notes: Concord grape, strawberry, & winey Region: Chalcuapa, Santa Ana Elevation: 1450-1700 masl About: The Pacas family has been growing coffee in the mountains of El Salvador for more than five generations. We’re proud to call them one of our longest-standing producer relationships, having purchased their coffees since 2012. Together, we’ve seen many ups and downs—leaf rust, down years, the discovery of new varieties, growth and the ability to purchase more coffees, wildly fluctuating prices, global pandemics—we’ve seen a lot. But, through it all, the Pacas family has been our first stop on any trip to El Salvador, and together, we’ve been able to navigate most challenges that present themselves. This naturally processed Pacamara is composed of coffees from all the Pacas family’s farms. Blending coffees from multiple farms allows the Pacas family to optimize efficiency during processing and provide a consistent cup profile. Pacamara, a hybrid of Pacas and Maragogipe developed through the efforts of the Salvadoran Institute of Coffee Research, boasts sizeable beans and a distinctive flavor profile that sets it apart from less exotic varieties.

Tasting Notes: Milk chocolate, red grape, blueberry, & syrupy The Ghost Rider blend by Proud Mary is designed to cut through milk and create a sweet and fruity latte or espresso. Its flavour profile is exciting and easy to brew - a coffee for the adventurous! Ghost Rider is comprised of natural processed coffees from Brazil and Ethiopia. Brazil brings the base notes of milk chocolate and a syrupy mouthfeel – Ethiopia brings the high fruity notes of red grape and blueberry. This fine recipe won the Golden Bean Award in Australia in 2013 and then went on to win three more gold medals back-to-back!
