After Bourke Street Bakery founder Paul Allam travelled to a small village on the Thai-Burma border to set up a bakery that local villagers could run, he knew he wanted to do something similar here in Australia.
Using his recipes and knowledge from Bourke Street Bakery, Allam & Co-Founder David McGuinness launched The Bread & Butter Project, Australia’s first social enterprise bakery, in the heart of Sydney.
The purpose of the Bread and Butter Project is to give newly arrived refugees an opportunity to start their lives in Australia. The organisation not only trains and supports refugees and asylum seekers to create a career in baking, but is a large-scale commercial bakery supplying hundreds of customers across Sydney.
We speak to CEO, Eva Rabanal about the challenges the organisation has faced, and what they’ve done to overcome them.
“It's often very difficult for these people to get their first foot in the door, get their first break when they have no very poor English, no Australian work experience, and no recognized qualification,” says Eve.
“We run a training program out of our Marrickville bakery, where the people on our program will get hands-on training. They also get English tutoring, and then at the end of the program, we find them work with one of our partner bakeries, for example in a cafe or a supermarket bakery.”
Running a lean operation
“We run a lean operation at the Bread and Butter Project,” says Eve. This is why the bakery needed a solution to streamline operations.
“We've been using Ordermentum since 2017, and it’s been fantastic. When our staff don’t need to enter orders, it gives our admin team the opportunity to provide better customer service and be more proactive on the phone. We deal with quite a lot of customers on a day to day basis and the process of entering orders and invoicing is quite tedious.”

Streamlining operations to focus on what’s important
All businesses are looking for ways to become more efficient, but it’s an imperative in a social enterprise.
“We like the standing order function, as it allows our customers to place recurring ongoing orders which they can log in and edit themselves at any given time.”
Eve says that customers being able to self-serve has been a game-changer for the B&B project.
“Our customers are able to log-in and place their orders online using an app or a computer. Whatever’s easiest for them. That then goes directly into our system and generates reporting for our team.”
It not only saves time in the moment, but mitigates errors down the track.
“Without Ordermentum, it would be a much more labour-intensive process of processing customer orders. And there's also the possibility of data entry errors which cause so many issues.”

Accounting for future growth
When it comes to keeping things ticking from a finance point of view, Eve says the tools within Ordermentum are invaluable.
“It helps us with our forecasting and so we can plan better. We use Ordermentum in conjunction with MYOB, and it syncs at the end of each day and makes invoicing and issuing statements, delivery dockets, and all our packing paperwork seamless.”

Working with purpose-led organisations
Keeping things ticking in the back-end, means more time for cultivating partnerships with other organisations, “We do a lot of work with socially-minded, values-led organisations such as Canva,” says Eve.
“Canva on a daily basis will put on a full spread of our products for their staff gives us the opportunity to train our trainees on how to produce the bread which then gets consumed by their team each day.”
