For over thirty years we’ve been smoking, curing and making properly — hams, bacons, salami, pastrami, kransky and more — the way it should be done. Small batch. Real ingredients. No shortcuts. WHERE WE COME FROM Uncle’s began in the 1990s, when Marian and Nora Poprawski started making traditional Polish smallgoods for Melbourne’s Polish community — the recipes they grew up with, made the way their family always had. Two decades on, the next generation took the reins: Brendan, our Smokemaster, and Bartek, our Ham Dealer. They cut their teeth running the Yumski hot dog stand at Federation Square back in 2010, then carried the family trade into a purpose-built, solar-powered smokehouse in Dandenong. Same family. Same standards. A bit more swagger. WHAT MAKES US DIFFERENT Everything we make comes back to three things. — Better Taste. Food that tastes like it should — rich, smoky and properly seasoned.
