9 Bakery Trends You Can Draw Inspiration From

One of the most exciting things about Australia’s bakery industry is that it's so diverse. Every year, we see new baking and pastry trends emerging and even though the end of the year is fast approaching new trends on the bakery scene are still appearing. Here are some of our favourites from 2018:


BOTANICAL FLAVOURS

Floral flavours are in! We've seen this trend move from lattes and snack bars into breads and other baked treats. The top “flower powers” you can use in your baking are lavender, rose, hibiscus. And don't forget the savoury flavours as well think, rosemary, thyme, and basil. 

 
PURPLE EVERYTHING

One of the top trends predicted for this year was “say it with colour”, and it's purple that is currently in the limelight. It doesn't matter if it’s dark violet, magenta, lavender, or lilac, adding this pretty shade to your macarons and cakes is definitely one way to win your customers over.

“Simply speaking, the trend for 2018 is purple,” says Paul Collins, the director of International Sales and Marketing at Exberry, the leading global provider of food colourings. “It is the ideal colour to attract attention and provides the perfect opportunity to unite market developments and consumer demands.”

EXOTIC DONUTS

Unique doughnuts have been in the spotlight for a while now, and we don’t see this trend slowing down any time soon. Whilst people are still chowing down on the classic and traditionally glazed, they also want to enjoy doughnuts with more fun and bizarre flavours and fillings. So if doughnuts are in your product range have a play around with your offerings and experiment with fun flavour combinations. 

BOOZE-INFUSED BAKED TREATS

Alcohol-infused desserts are all the rage and they’re making their way on to several bakery menus across Australia. From margarita bars and liquor ice cream sandwiches to booze-filled doughnuts and beer muffins - these treats are guaranteed to fly off your shelves!

THE FEEL GOOD BREAD

As more and more people switch to healthy eating and making environmentally conscious food choices, more and more bakers are starting to innovate and produce “feel good bread” that is good for people and good for our planet. 

PINK CHOCOLATE MADNESS

The arrival of the ruby chocolate KitKat is giving you a new way to get creative with your pastries and desserts. This pink chocolate is said to be less sweet than milk and has a kick of berry flavour. Even better, it’s pretty in pink! 

‘BERRY’ GOOD CAKES

Cake decorating has also moved up a notch. Gone are the days of simple layered cakes; now, we've got cakes topped with jewel-like berries and fresh fruit that will definitely give your Instagram feed the creative edge it needs.

DECORATE-IT-YOURSELF BAKED PRODUCTS

Just like ready-to-bake treats, decorate-it-yourself cakes, cupcakes, and cookies are also experiencing their golden moment. People love the DIY concept and the idea of decorating their goodies with anything they want plays in to the customisation trend, so why not capitalise and start selling classic cakes and cookies that come with pre-packed colourful icings, a piping bag, sprinkles, and mini mallows? 

CAKES WITH EDIBLE ART

Cakes with hand-painted designs are also becoming quite the hit. Now we acknowledge that this might just need a little more talent (and greater attention to detail) but trust us, if you can pull this off, it’s sure to impress your customers and keep them coming back to you. After all, hand-painted cakes are absolutely unique and no two will ever be exactly the same!
